Butternut squash and sweet potato au gratin. This was amazing! We think it would be good with some Yukon Gold potatoes mixed in. They'll add a little more savory flavor, but their buttery flavor and smooth texture will work well with this dish. I also think it needs a little more thyme and garlic. I subbed a mix of mozzarella and parmesan cheese for the manchego.
